Clarified Butter is the oil separated from the solids and water in a block of butter. It’s got the taste of butter but has a much higher smoke point than full butter so can be used for all sorts of dishes where full butter would simply burn.

1 Kg Unsalted butter (£7)

Melt on a medium low heat

Simmer
The bubbles are from the water evaporating.
Skim the froth off and save for use in baking or just on toast. This took almost 50 mins.

750g Clarified butter & 150g of skimmed solids.
