Puff Pastry Pies

Use a sheet of ready rolled puff pastry. £1.25 from Tescos. One sheet will do 3 decent sized individual pies.
Slice into 3. Then slice each piece in half.
Cut a hole in one half. The removed piece will be the lid.
Lay the piece with a hole ontop of the remaining piece.
Put on a baking tray and cook in the oven.
I do mine at 180C in a fan oven for 20-25mins.
Remove from oven and pat down the base which will have risen through the hole. You could use baking beans to prevent the rise but it’s fiddly and patting it down is very quick and easy.
Fill your base with whatever you like.
Put the lid on.

I’m not exactly brilliant at presentation, I’m more interested in taste. These could be made a lot prettier by using a couple of round pastry cutters, one slightly smaller than the other. The pies can have any filling that you choose to make in a separate pan, savoury or sweet, the advantage is that it’s quick and the crusts are crisp and well risen.
